I made this last night and it's really rather nice.

1lb thick cut bacon (I used diced Gammon)
6 eggs
1tsp mixed herbs
Short crust pastry
Salt & pepper

Heat oven to 190C (gas mark 5?)

Trim any fat from the bacon and cut into half inch cubes

Break the six eggs into a mixing bowl, add herbs, salt & pepper and beat lightly

Add bacon to the egg mixture

Line a pie dish (mine was 25cm I think) with pastry, pour in the mixture and then cover with a pastry lid and seal well

Brush the lid with milk/egg and place in the oven for 30/40 minutes

 

Delicious hot or cold! Next time I make it I may well add half a finely diced onion.

I love all Dan's cooking. (And yes Helen I am a crawler - but I don't care. I get my dinner cooked for me (nearly) every night and I am very grateful )

It was made with Gammon from Judds but sausages sound great. Dan please note!

I made this pie again, but with pork instead of gammon (by accident!) and with mushrooms - still good, nice with some hot English mustard!

I made pie. It was good. I made it with onion, tomato, and chorizo, and add a few pips of tobasco, some garlic powder and paprika to the egg as well as mixed herbs and pepper. I must invest in a rolling pin though, I had to improvise with a glass wrapped in tin foil. I think next time I will lattice it so there is slightly less pastry.

try a healthy stirfry with no added oil

maybe with fresh salmon or tuna with lots of garlic.
