Made this last night it lovely.
Semi-freddo
4oz raspberries
30z golden caster sugar
284ml double cream
4tbsp limoncello
2 x 2 creme fraiche
for the coulis
8oz raspberries
2tbsp golden caster sugar
2tbsp limoncello
For the semi-frddo line a dish. Mash up half the raspberries and sugar.
Whisk the cream, sugar, limoncello to soft peak then add creme fresh
then add the the mash and rest of raspberries.
pop into dish and serve anytime after about an hour.
For the coulis just blend all ingreident together and pour over dessert. this is seriously easy and yummy. And if diabetic like me just use canderal instead.
