here's a thai green curry recipe.

serves two.

2 or 3green chillis,1fresh lime,1 clove garlic,1shallot,lots of corrander,half of lemon grass,2lime leaves,thai basil,sweet peppers,beansprouts{optional}and 1 can coconut milk, na pla.[thai fish sauce,must have.

method.....

1.stick the chillis,lime zest and juice,garlic,shallot,corrander leaves lemongrass with the skin removed,into a blender and wizz up to make a paste.

2. if useing chicken it's best to felt it first.cut your chicken in even peices and cover with cornflour then blanch into boiling water for 30 seconds only,take out and put to one side.

3. place a little oil into a hot wok add your peppers,add your paste and fry for 30 seconds,add your meat,fine strips of lime leaves then coconut milk,and reduce on a high heat until cooked then add your beansprouts for a minute or two.

4. season with the fish sauce and fine strips of thai basil and serve.

if this seems like to much effort then buy a jar of paste....
