Veg alternative to spaghetti and meatballs.

Start with the sauce - I make huge batches of this and freeze it.
1 onion - chopped
2 cloves garlic - chopped
1 carrot - chopped
1 stick celery - chopped
2 tins of tomatoes
1 bay leaf
1 tsp dried basil
red wine or stock
olive oil
salt, black pepper
mascarpone cheese

heat olive oil add bay leaf and fry onion and garlic till translucent. add carrot, celery and basil. Cook for 5 mins.

Add tomatoes, then use 1 of the empty tins and half fill with water of red wine. Add this to vegetables along with 1 tsp of vegetable bouillon - marigold is the best.

Bring to boil, then simmer with lid on for at least 1 hour.

Allow to cool, then add a little salt, lots of black pepper. Remove bay leaf and liquidise along with a couple of tablespoons of mascarpone.

"Meatballs"

Courgettes - about 5 or 6
cheddar cheese
1 onion - finely chopped
marmite
1 tsp marjoram or oregano
1 egg
salt and pepper
plain flour - white, wholemeal or gram
olive oil
sunflower oil for deep frying

grate the courgettes, add a good pich of salt and leave for 20 minutes. Place grated courgettes in tea towel and squeeze as much liquid out as possible - eep squeezing and you will get loads out.

transfer to large mixing bowl with herbs, salt, pepper and grated cheddar.

fry onion in a little oilve oil and add melt a teaspoon of marmite into this. Add to the courgette mixture and mix with a fork. Add egg and mix again. Then add flour and keep mixing until you get a sticky, messy mixture.

using your hands, make golf ball sized "meatballs" and deep fry until brown. Remove from oil, drain off excess and place in a large dish (lasagne dish or similar). When all the balls are fried and placed in the dish, cover them with the tomato and mascarpone sauce, then bake in oven at 200C till sauce bubbles - 20-30 mins.

Serve with wholemeal spaghetti and lots of parmesan and a rocket salad.

Yes. Assuming a vegematarian and vegetarian are one and the same!

in fact, I just made the courgette balls for later tonight when kids get in.
