Finally got round to wieghing stuff out as I cook it

1 packet of paneer (I get mine from Sabar Brothers in Wexham/Slough) - cut into cubes about 1 1/2 cm
about 1kg of spinach
4 cloves garlic
ginger - about 1 1/2 to 2 teaspoons
2 green chillies - or more if you like it hot
nutmeg
garam massala
small pot of cream - double, single or half depending on how much of a diet you are on
sunflower oil
salt
coriander leaves

Wash spinach and place in pan with only the water clinging to the leaves. Cook till wilted, then squeeze out as much water as poss. Chop and leave to one side

Heat oil in pan - about 2 tablespoons - then fry paneer cubes will brown. remove from pan and place on kitchen paper.

fry finely chopped garlic, ginger and chillis (remove seeds if they are hot) for about 1 minute.

Add spinach and stir fry for 5-10 minutes

put paneer back in - sprinkle with 2-3 teaspoons of garam masala and a pinch of nutmeg. stir spices in and cook for about 5 mins

turn heat down and add cream and a little salt. let it heat up again, sprinkle with chooped coriander leaves

(Emsy - at this stage you could add grated cheddar and mozarella and place under the grill)

serve with rice and raita or with breads - bhatura from Sabar brothers are the best.
