Corned Beef Bake
400g corned beef
250g potatoes
300ml milk
1 medium onion, chopped
1 tblsp butter
1 tblsp plain flour
˝ tsp salt
˝ tsp grated nutmeg
Preheat the oven to 200°C or Gas Mark 6.
Peel the potatoes, cut into small pieces and boil until soft.
Mash the cooked potato and mix well with the salt, grated nutmeg and 2 tablespoons of hot milk.
Melt the butter in a pan and stir in the flour. Cook for 2 minutes over a low heat, stirring continuously.
Gradually stir in the rest of the milk and bring to the boil.
Using a fork, break the corned beef into pieces. Grease an ovenproof dish and place half the potato in the bottom. Add the corned beef and cover with the sauce.
Cover with the rest of the potato and bake in the oven for 20 minutes.

Going to try this recipe in the next week or so - found it by accident when looking for a decent Corned Beef Hash recipe. Does anyone have one?
