This recipe is supplied by Geraldine.

Coca Cola Ham as follows:

Take 1 x 1.5kg (or smaller if only 2 people) gammon
joint.  Unsmoked is best.

  
Remove all packaging and any rope or collar.  Stab
several times with a skewer and then place in a large
saucepan.

 
Cut a large red onion into quarters and place around
the top of the gammon.  
Then pour over coca-cola (not any of the diet rubbish,
you need the full sugar content) until the gammon is
covered.

  
Bring to the boil (be careful not to let it boil over
because the result is a sticky mess on the hob).  
Then simmer for 2-2.5 hours. 

It is important that you stab the gammon before adding
the coke. 

Serve with gravy and creamy mashed potatoes.   Yum!

You can also replace Coca-Cola with Dr Peppers.

I think it would be a good idea to boil the gammon in water first and drain off the brine

EDIT add: Might well try this, it appears to be a popular dish in the American Deep South. Only thing is ..will Nigella do it for me?

you do not need to boil first eddie,just soak in water and change a few times.

i would replace coke with cider because i was not keen.

As I had brought a piece of gammon I am currently giving this recipe a go. Will let you know how it turned out.

No.... Tonight I am pushing the boat out and serving Gammon, Egg and chips....

Don't know how much will be left as I keep sneaking a slice here and there....
