My first foray into a homemade curry came out pretty well, and it's quick and easy peasy too:

Brown some chicken in a pan with two cloves of garlic, about an inch of grated ginger and a chopped onion. Once the chicken is cooked, add some washed spinach (volume as desired), a teaspoon of cumin seeds, half a teaspoon each of ground cumin, ground coriander, and ground turmeric, and a quarter of a teaspoon of chilli powder, with salt to taste. Mix and wait for the spinach to soften (a couple of minutes) and serve immediately. (Also nice with cheese on top).

I like my curries saucy so I may try varying the ingredients a little to include tomatoes next time and add peppers to aim for a dupiaza.
