i have used both, - in my opinion, i prefer meat from judds, savannah iso k for summer barbeque cuts, but judds is just great quality and good service all year round... Rob and andrew are happy to prepare what you need ... they get my vote... |

I've taken delivery of my 9Kg Narragensett, It will be fabulous, especially as I'm brining it and then cooking it myself. I'm going to wash it down with a superb 2009 Dom Perignon which I'm sure will also be pretty fabulous.

My final choice from all the assembled turkeys was actually not turkey at all, but 2 large guinea fowl. I don't really like turkey but sometimes think I should cook it for everyone else. However, I eschewed the big birds this year and plumped for my own favourite fowl. I've already massaged them beneath the skin of the breast with a little mixture of softened butter, small slivers of cooked crispy bacon and grated lemon zest, and will serve with a redcurrant jelly and red wine jus, little pork, apricot and almond stuffing balls, sweet red cabbage, crisp roasties and my family's traditional recipe for buttered carrot and parsnip mix. My Irish granny's fab recipe sherry trifle (no fruit or jelly, of course, but as much sherry as the jammed madeira sponge slices will absorb, topped with home made set vanilla custard and toasted, flaked almonds, then single cream to serve) will follow. Salivating already. |

sounds pretty fabulous!!!!! I would consider the 'Thomas Keller' method (ie cooked super high temp super fast) for the fowl, although perhaps not at Christmas.

stella everytime for me..... and as for the 25th, - beef for me , dont like turkey, and hate the fact everyone expects you to cook turkey......done salmon, goose and all sorts before, but i like my beef !
