I LOVE monkfish wrapped in Parma ham but have never thought of that in the middle. I particularly like mushrooms and courgette with it and pan-cook the lot to save on oven energy. I serve it with a lightly toasted panini and add wine and butter to the pan juices to make a 'jus'. Yummy.

Easy reciepe
4 slices of pama ham over lapping
sundried tomatoes mashed with fresh basil spread over pama hm
monk fish tail end placed in middle and rolled
bake in oven for 20 minutes
filling and delious
