This is a sauce for any form of pasta, including the meat sauce in lasagne. Its incredibly quick and easy and EVERY person I've served it to so far, including children, has liked it:
Ingredients:
Beef Mince (I use as lean as poss)
Tomato puree (weeny can)
Cream of Tomato soup (canned, cheap as you want)
Dried basil
Onion
Garlic (optional)
Method:
Chop the onion either finely or coarsely, either is nice and fry with the mince in a little oil ( olive oil is best but not essential). Fry until mince is browned. If using garlic, fry and whole, peeled clove with the meat and then remove clove once frying finished.
Whilst frying is happening, empty the can of soup into a saucepan and add approx 2 largish teaspoons of tomato puree. Stir it all together, over a medium heat. Don't worry if puree doesn't blend completely in at this stage. Sauce should be a darkish orangey-red. For a stronger flavour, add more puree.
Drain off the fat from the mince and onion and throw them into the tomato sauce (mince and onion, not fat!). Then add dried basil to taste (I like loads). Stir everything in and heat through so bubbling nicely, but not boiling.
Then serve with pasta, or on top of a baked spud or anything else you want! Bit of garlic bread and some nice red plonk and supper's done!

The basic recpe is cheap and cheerful and quick and I'm sure can be adapted / improved by various means

When I left home my Mum gave a rather complicated recipe for bolognese sauce. I have, over the years, simplified it to:
Ingredients
Mince
Onions
Garlic (if desired)
Jar of Dolmio
Red Wine
Worcester Sauce (if desired)
Method
Chop onions and garlic into smal pieces
Fry onions and garlic
Add minceand fry until brown
Drain off fat
Add jar of Dolmio
Pour red wine into empty Dolmio jar until it is level with bottom of label
Add red wine to mince
Add Worcester Sauce to taste
Bring to the boil and then simmer for 10/15mins stirring regulary.
This recipe can be for as many people as you likeas the amount of wine depends on the size of Dolmio Jar!

If you have a bit more time, use a can of chopped tomatoes instead of tomato soup. Stick them in a saucepan and add a clove of garlic (two if you're a garlic fan like me), a good splash of red wine, a few pips of tabasco, a splash of worcester sauce, some fresh basil & oregano (or dried) and some dried mixed herbs, pepper, and half the tomato tin can of warm water. Simmer for about twenty minutes, then add the cooked mince & onions and simmer for a further ten minutes, stirring regularly.
One can of tomatoes makes enough sauce for two.

I also make my own.
1 x Can of Tomatos
Splash of Olive Oil
Level teaspoon of Sugar
Sprinkle of Italian Mixed Herbs
Tiny Pinch of Hot Chilli Powder
Half Beef Oxo Cube (Optional)
I use it for most of my pasta dishes and prefer it to the jars of ready made sauces.

I'm on a career break from the company who make Dolmio, amongst other things. I once worked in Customer Complaints and the main one about Dolmio was the presence of what people used to term "spiders". They were actually tomato calyxes ( we got them to return them to us) and it always amazed me that when we explained this to customers they could get enraged by the idea of real, fresh tomatoes being used in the sauce!
Its made in Holland, I've been round the factory and happily eat the products, as its so clean - can highly recommend!

Waitrose do a wonder fresh Bolognese sauce, and also fresh pasta. Only takes 5 minutes and you've got a great quick meal, especially washed down with a few bottles of chilled Pinot Grigio!
