I made this last night and it's really rather nice.

1lb thick cut bacon (I used diced Gammon)
6 eggs
1tsp mixed herbs
Short crust pastry
Salt & pepper

Heat oven to 190C (gas mark 5?)

Trim any fat from the bacon and cut into half inch cubes

Break the six eggs into a mixing bowl, add herbs, salt & pepper and beat lightly

Add bacon to the egg mixture

Line a pie dish (mine was 25cm I think) with pastry, pour in the mixture and then cover with a pastry lid and seal well

Brush the lid with milk/egg and place in the oven for 30/40 minutes

 

Delicious hot or cold! Next time I make it I may well add half a finely diced onion.

I used to be with it. But then they changed what it was. Now what I'm with isn't it, and what's it seems scary and weird.
