I have a packet of couscous in my cupboard, recently purchased by Mr Moggies. Can anyone give me some ideas on what on earth to do with it??? ie recipes... |

I usually soak it, steam it and then serve it with roasted vegetables. You can mix it with spring onion, chopped cucumber and tomato for a refreshing taste. North African style would be to have sultanas and apricots in it. |

Last week I had it as a salad with feta cheese and roasted peppers, chilli, black pepper, raw carrot and spinach. I also have it with a moroccan tagine, either with chicken or lamb: mix a tin of chopped tomatoes in a casserole dish with half a tin of water, a splash of worcester sauce, a splash of red wine, a clove of crushed garlic, a teaspoon of ground cumin, a teaspoon of paprika, half a teaspoon of hot chilli powder and half a teaspoon of cinnamon, plus half a teaspoon of turmeric. Mix, then add chicken / lamb, plus a segmented orange (squeeze a little juice in first), dried apricots, and sultanas. Cook until meat is tender. |

I'm not a huge fan of couscous, but it is quite nice if you serve it
with roasted veg. Put oven onto 220-240C. Place chunks of aubergine,
garlic, onion, red pepper, courgette, mushroom, artichoke hearts, chili
peppers, chick peas in a large dish - lots of olive oil, salt and
pepper. Roast until everything starts to char slightly. Serve on a bed
of couscous which has been soaked in boiling water. A dollop of greek
yogurt goes well with it and takes the heat off the chili.

Maybe next time - I still have this packet of Sainsbury's SO Organic Cous cous, to get through first!
