This one always goes down well - with meat eaters too! In fact they sometime request I make it when I invite friends for dinner.

block of feta
filo pastry
spinach - fresh of frozen
2 eggs - hard boiled
tin of green lentils
onion
garlic
cinnamon
black pepper
lots of butter
sesame seeds

wash spinach and wilt in the water still clinging to the leaves. if using frozen, stick in microwave for a couple of minutes. Squeeze out as much liquid as possible.

finely chop onion and garlic and fry in olive oil or butter.

Place spinach, onions, garlic and lentils (rinse them a few times to get rid of the tinny taste) in a bowl. crumble the feta in and add chopped eggs. You could also add chives, mint or oregano if desired.

Add a pinch of cinnamon, lots of black pepper and stir well. The feta is salty so you don't really need to as any more.

Line a open flat dish with filo pastry - brush with melted butter, then place another layer of filo on top. Fill the dish with the mixture, then cover with layers of filo, brushed with butter. About 4-5 layers should do it. Brush last layer of filo and sprinkle sesame seeds on top.

cut into squares or wedges depending on whether your dish is rectangular or roundm then bake at 200-220C until golden.

Serve hot or cold with green salad and lebanese bread.
